Yangzhou Fried Rice (Golden Egg Rice Method)
Ingredients

4 cups cooked rice
(1:1 rice-to-water ratio, rested in the fridge overnight) -
3 eggs, beaten

6 oz small shrimp, peeled & deveined

6 oz Spam, small dice
-
½ cup green onion greens, thinly sliced

1 cup frozen peas & carrots
-
2 Tbsp soy sauce
-
2 tsp fried rice seasoning (see below)

Neutral oil (canola, peanut, or vegetable)
Fried Rice Seasoning

Equal parts salt, sugar, and white pepper
Method

Prep proteins
Heat a wok or large skillet over high heat. Add oil and sear Spam until lightly crisp. Add shrimp and cook just until pink. Remove and reserve. -
Egg-coat the rice
Lower heat slightly. Add a bit more oil, then add cold rice to the pan. Pour beaten eggs over the rice and immediately toss to coat every grain. -
Fry until golden
Spread rice out and cook, tossing frequently, for about 2 minutes, until grains are separated, dry, and lightly golden. -
Season
Sprinkle in fried rice seasoning and drizzle soy sauce around the edge of the pan. Toss to distribute evenly. -
Combine
Add peas and carrots, return shrimp and Spam, and toss until everything is hot. -
Finish
Fold in green onions, taste, and adjust seasoning.
